For The Chicken:

  • Rotisserie Chicken: The best store-bought shortcut. Convenient, tasty, and great for white and dark meat.
  • Cream of Chicken Soup: Savory and creamy, this creates that signature, velvety sauce.
  • Sour Cream: Adds a rich tanginess to the creamy sauce.
  • Onion Powder and Garlic Powder: Nice flavoring for the casserole.

For The Topping:

  • Ritz Crackers: Ultra buttery and crunchy for that decadent topping.
  • Almonds: Extra nutty flavor and texture.
  • Poppyseeds: The star ingredient! These have a rich and nutty flavor

How To Make Poppy Seed Chicken

1. Remove chicken from bones and cut into desired sized pieces.

2. Add to a large bowl with sour cream and both cans cream of chicken.
3. Add in seasonings and mix well.

4. In a separate bowl add crushed Ritz, almonds, poppy seeds and melted butter.
5. Stir until everything is well combined.

6. Grease a casserole dish then add chicken mixture.
7. Pour crackers over top and spread evenly.

8. Cook for 30 min in a preheated 350° oven.

  • Choosing Your Chicken: I love rotisserie chicken. It’s super convenient, always tasty, and a time saver. You can make your own chicken if you’re up for it, though. Baked chicken works just as well, just be careful to not overcook it since it’ll get baked again in the casserole.
  • Keep The Casserole Creamy: Keep things from drying out by using plenty of that creamy sauce. If your mixture is looking too thick, add a splash of chicken stock or cream to loosen it. And be sure to not over-bake – once it’s golden and bubbly, it’s ready. I like to cover it with foil while baking until the last 10 minutes, too. Another bonus tip: chicken thighs are juicy and flavorful, so they’ll be sure to lock in moisture.

FAQs

Why is my poppy seed chicken casserole soggy?
If you haven’t baked your casserole long enough, or at a high enough temperature, the cracker topping will be soggy and won’t crisp up. Be sure to bake the chicken uncovered towards the end of the cook time to ensure it gets bubbly, golden brown and crispy.
