One Pot Cheesy Chicken Spaghetti

One pot meals are great for dinner ideas if you want to cut down on post supper dishes! This cheesy chicken spaghetti is delicious and simple to make. It’s comfort food with a little spiciness on the back end from the hatch green chili’s. I think your family will love it and be asking for seconds!

Equipment

  • 1 Dutch oven or large pan

Ingredients

  • 1 lb bacon
  • 2 lbs cubed chicken breast
  • taco seasoning
  • minced garlic
  • 24 oz chicken broth
  • 4 oz cream cheese
  • 1 cup heavy cream
  • 1 cup whole milk
  • 8 oz hatch green Chili’s
  • 4 oz Pepper Jack cheese (shredded)
  • 4 oz sharp cheddar cheese (shredded)
  • 16 oz spaghetti
  • 1 tbsp chili powder
  • 2 tsp cumin
  • 1.5 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp smoked paprika

Instructions

  • Cut up bacon and cook until crisp then remove.
  • Remove about 1/2 of bacon grease from Dutch oven.
  • Cube chicken, season with taco seasoning and cook on med high heat in bacon grease
  • Remove chicken once cooked through and set aside
  • Turn heat to low med, add minced garlic and cook for a 45-60 sec
  • Add cream cheese, chicken broth, heavy cream, and whole milk
  • Pour in green chili sauce and seasonings
  • Once cream cheese is melted add Spaghetti
  • Simmer covered but stir every few minutes until pasta cooked
  • Stir in cheese and add chicken. Top with crispy bacon. Enjoy!

Notes

I prefer making this as above but there are ways to simplify if if you would like to save time and I still think it would be delicious.  You could use bacon pieces instead of cooking the pound of bacon.  That would save around 15 min.  I would prob use around 1 cup.  Also,  you could get a rotisserie chicken if you don’t want to cook the chicken although it will still take a little time to remove the skin and meat from the bones.  Lastly,  I prefer to shred my own cheese as it melts bettter not having the “anti-caking” agent on it but pre shredded cheese will be fine as a substitute.  I hope you enjoy this recipe and let me know if you have any feedback in the comments.  Thank you!

    Just found this recipe and have everything to make it except for the hatch chilis. Is there anything else you’d recommend in place of that?

      You can leave em out, just won’t be as spicy. Still tasty though!
