How To Make Unstuffed Bell Peppers :

1. Put peppers/onions in a large pan and cook down on med heat in bacon grease for about 5-6 min.

2. Add and cook ground beef, I like to get a little color on ground beef before mashing.

3. Once ground beef is cooked through, add seasonings and garlic.(Feel free to remove a little grease with a paper towel if desired before adding seasonings.)

4. Pour in crushed Tomatoes. Add beef broth and bring to simmer.
5. Turn heat down to low medium and work in rice after rinsing until water is clear.

6. Cover and allow rice to simmer approximately 20 min until rice has absorbed liquid and is fluffy.

7. May take a couple min longer, just be patient.
8. Turn heat to low, add shredded cheese and cover until cheese is melted.

Notes

This amount feeds about 6 people a decent sized serving. I salt to taste since the broth has sodium as well. If the rice looks like it needs more cook time but has absorbed most of the broth,  add about 1/4 cup of water and let it go a little longer.

    I just made this for supper but my rice is still hard. Is there any hope on getting it to cook without the rest burning?

      Add some more water or broth and let it simmer until rice softens! Maybe 1/2 cup at a time.
