Sausage, Egg, and Biscuit Casserole

This Sausage, Egg, and Biscuit Casserole is one of our go to breakfasts for holidays!  It’s so easy to prep the night before so morning of we can just pop it in the oven and enjoy!  It’s hearty and full of flavor,  something my whole family enjoys!

It’s become a tradition to have this Sausage Egg Biscuit Casserole on Christmas morning.  I get up before the kids and get it in the oven before we start opening gifts.  It takes about an hour to bake giving us plenty of time to enjoy the morning before having a delicious breakfast.

  • It can be prepped ahead of time. This makes your morning that much easier and stress free.
  • Prep time is less than 30 min. Brown your sausage and cook your bacon.  Otherwise,  its just beating some eggs and cutting up your biscuits which can be done while the meats are cooking.
  • It appeals to almost everyone. Not often that you find someone that doesn’t enjoy breakfast casserole as it combines all the classic breakfast foods.
  • You can spruce it up. When I make this for my wife’s grandmother,  I add spinach and onions bc she loves those.  You could do peppers as well for some extra flavor!

Ingredients

  • Jumbo Biscuits: Grands or similar…  I buy store brand if Grands are not on sale personally.
  • Eggs: Adds a ton of protein and no breakfast is complete without eggs!
  • Breakfast Sausage: Adds heartiness and flavor to the dish.
  • Bacon: Bacon makes everything better!
  • Colby Jack Cheese: Melts well and adds some really good mild flavor.
  • Seasonings: Salt, Pepper, and Garlic powder add all the flavor we need.
  • AP Flour: Used to make gravy unless using a gravy packet.
  • Whole Milk: Also used for the gravy!

How to make Sausage, Egg, and Biscuit Casserole

1. Preheat oven to 350 degrees.
2. Spray a deep dish 9 x 13 baking dish with cooking spray.
3. Cook the breakfast sausage and set aside about 3/4 of it. The remaining sausage and grease will be used for a roux.

4. Cook bacon oven at 375 until desired doneness, then chop into small pieces and set aside.

5. If adding onions and spinach,  on med heat cook down onion in some bacon grease for about 5 min then add spinach. Cook until wilted then remove pan from heat.

6. Beat eggs and season with SPG.

7. Quarter grands biscuits and add to baking dish.

8. Next layer with sausage, bacon, spinach, and onions.

9. Pour beaten eggs over mixture.

10. Sprinkle Colby jack cheese on top and bake uncovered for 30 min at 350.

11. In the meantime make your gravy. on low med heat add flour to sausage and stir until covered(remove excess grease if it looks like too much before adding flour)

12. Let flour cook off for a couple min before working in milk.

13. Season with SPG and allow to thicken.

14. If adding during baking, after 30 min add gravy to top of casserole and then bake additional 30 min at 350 degrees.
15. Remove and allow to slightly cool before enjoying.  I like to let it set around 10 minutes.

Expert Tips

  • Prep this the night before.  Make next morning way easier.
  • Spruce it up. Add onion, peppers, or even spinach to get some veggies in there.
  • Change up your cheese. Use a different cheese for different flavor.  I don’t typically use only cheddar though personally bc it gets the top really oily.  But,  you can dab it with a paper towel if you prefer cheddar.
  • Add Ham. A pound of diced ham will give you even more flavor and make it more hearty.
  • Use a gravy packet. If you don’t want to make your own gravy you can use a packet to keep it simple!

Storing and Freezing

You can store sausage, egg, and biscuit casserole in the fridge covered up to 5 days.  If you let it cool completely,  it can be frozen in an airtight container for up to a couple months!

To reheat after fully thawing in fridge,  breakfast casserolcan be microwaved if eating in individual portions or you could cover with foil and reheat until warmed through at 350 in the oven.  Should take 20-25 min.

Frequently Asked Questions

  • What kind of sausage is best for this casserole? Use your favorite brand!  I many times buy what is on sale.  You van use mild, medium, hot, sage, or even maple if you want a little sweetness.
  • What other mix-ins are good for this breakfast bake? As I stated above,  many time I’ll mix in spinach and onions although peppers would be a great choice as well!  I will also sometimes add some diced ham.
  • Should the biscuits be baked before adding to the casserole? No,  I just cut them into 1/6 portions and throw them in the baking dish.
  • How do I know when the casserole is finished baking? Typically they will be cooked through in about an hour.  That being said,  every oven heats differently.  If they need a little more time after you cut into it, place the breakfast casserole back in the oven for another 10 min or so and you should be good!

  • 2 cups whole milk

Notes

Prep the night before if you like so all you have to do in the morning is pop it in the oven!  You can use packet gravy if you don't want to make your own.  If so,  either use 1lb of sausage or feel free to add both lbs to casserole.
