Blueberry Protein Pancakes

You don't have to sacrifice flavor when eating healthier. I have been eating better and trying to increase protein in my meals. These blueberry protein pancakes are absolutely delicious and packed with protein!

Ingredients

  • 1 cup Power Flour
  • 2 tsp stevia
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup greek nonfat yogurt
  • 1/2 cup 2% milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp melted grass fed butter
  • 1/2 cup frozen blueberries

Instructions

  • In one bowl, mix dry ingredients and set aside.
  • In a separate bowl, whisk together wet ingredients.
  • Pour wet ingredients into dry mixture and whisk until just combined.
  • Using a nonstick pan, turn on heat to low medium.
  • Pour around 1/4 cup of batter in pan and drop some frozen blueberries into batter. Allow to cook until golden brown on each side.
  • Top with sugar free syrup and enjoy!

Notes

If you don't have power flour you can sub all purpose flour for the same amount,  just won't get the same protein.  But,  they will still be delicious pancakes!  I use "Walden Farms" sugar free syrup,  its available at most grocery stores.
