This Baked Shrimp Scampi with Tortellini is so simple to make with one casserole dish. There’s no searing or boiling, just bake right in the oven for the easiest weeknight meal.

Shrimp scampi is a creamy dish that consists of shrimp covered in a rich and buttery sauce with flavors of white wine and garlic. It is a pasta recipe that is extremely popular and tasty.  I’m here to make this classic Italian dish much more simple, with the ease of only using the oven and one pan. The pasta even cooks in the oven, isn’t that amazing! 

Tortellini is always my go-to way to simplify the process of cooking a recipe. It adds the perfect flavor and texture without the hassle of fancy pasta preparation. This has been a very popular recipe of mine, with one reader Christine commenting:

Ingredients for shrimp tortellini.

Ingredients:

  • Tortellini (fresh) – Such an easy and delicious pasta to use.
  • Large or Jumbo Shrimp – The large size will ensure the shrimp stays juicy and tender
  • Chicken Stock or Broth – Creates the perfect base for sauce.
  • Dry White Wine – I use boxed Pinot Grigio, but feel free to use a different kind.
  • Heavy Cream – This will make the dish creamy and rich in texture.
  • Juice of Small Lemon – Adds a nice citrus flavor to cut through the richness of the sauce.
  • Grated Parmesan (in dish) – We will use parmesan in the base sauce as well as on top.
  • Minced Garlic – I use Jarlic (jarred garlic) but feel free to use fresh if you prefer.
  • Red Pepper Flakes – Adds the perfect amount of spice.
  • Kerry Gold Garlic Herb Butter – This is my favorite brand to use, adds so much flavor.
  • Shredded Mozzarella Cheese – This cheese pairs very well with the rest of the ingredients.
  • Grated Parmesan (for top) – The second round of parmesan to top things off!
  •  Italian Panko Bread Crumbs – A crispy final addition to the top of this dish.

How To Make Baked Shrimp Scampi with Tortellini:

  1. Preheat oven to 375 degrees.
  2. In a 9 x 13 glass baking dish, chicken broth, white wine, and heavy cream.
  3. Next add lemon juice, grated parmesan, red pepper flakes, and minced garlic.

4. Whisk all that together before adding tortellini.

5. Bake covered for 20 min.
6. While in oven season shrimp with preferred seasoning.

7. Salt/pepper/garlic powder is fine! After 20 min fold in shrimp.
8. Add mozzarella cheese, grated parm, and italian panko bread crumbs.

Expert Tips:

  • Buy fresh refrigerated tortellini for ease. 
  • No need to boil the pasta, the oven cooks it perfectly for you.
  • Make sure you add the shrimp during the second half of baking to avoid overcooking and texture becoming rubbery. 

What to Serve With Baked Shrimp Scampi with Tortellini:

 This dish is very creamy and rich, therefore it goes well with a crunchy side of bread/garlic bread, roasted vegetables, or even a crisp, refreshing salad. This shrimp scampi is also perfectly fine on its own if that is what you prefer. 

Storage:

This dish can be stored in both the fridge and the freezer. The fridge is my best recommendation, and can be preserved for up to 5 days in an airtight container. Freezing is also an option, however it is important to allow the dish to thaw before reheating and additional seasonings/touch ups may be required.

Yes, this is a very popular method.

What temperature do you bake shrimp scampi?
It depends: higher temperatures like 400 degrees are best for a lower cook time, such as 8-10 minutes. However when cooking for longer you want to use a temperature such as 375 or 350 degrees.

Do you need to cook the pasta separately for baked shrimp scampi?
Yes! You can buy pre-cooked tortellini for ease, but all pasta needs to be cooked until it is al dente before adding into the dish.

    I actually made this and put it in a crock pot. Added a little extra liquid and parboiled my dry cheese tortellini. Omitted the panko obviously… This is an amazing recipe and I can’t wait to try it baked in the oven!

    Made this tonight and followed your instructions except for the white wine, I added a touch more broth instead. This really was very simple to make and it really is a quick and easy delicious dish. I paired it with a garden salad and some Cheddar Bay Biscuits.

    I haven’t made this yet. Planning it for tomorrow. Kerry Gold herb garlic butter is listed in the ingredients but I don’t see where it’s used in the recipe.

      The video will show where to use it but just put it in the middle in the initial covered bake before adding shrimp.
