Loaded Enchilada Casserole

Nothing healthy or authentic about this, but it is delicious! When you are tired and just want make something everyone will enjoy I think this will fit the bill!

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 12 oz queso
  • 16 chicken taquitos frozen
  • 20 oz red enchilada sauce
  • 2 cups shredded cheese
  • 1 bag chili cheese Fritos

Instructions

  • Preheat oven to 375.
  • Brown ground beef, remove excess grease if desired.
  • Add taco seasoning and mix well.
  • Pour in queso and stir until well combined.
  • In a 9x13 baking dish(deep preferred) pour some enchilada sauce on the bottom.
  • Add taquitos and pour more sauce on top.
  • Layer with ground beef/Queso then add shredded cheese.
  • Cover with aluminum foil and bake for 1 hour at 375.
  • Remove foil and cover with chili cheese Fritos. Enjoy!
