Brisket, Brie, and Blueberry Sliders
If you have some leftover brisket, I highly recommend you try these easy sliders! If you don't have brisket, I think some leftover roast would work beautifully as well!

Servings: 12 sliders
Ingredients
- 2 lbs Cooked Brisket 2-3lbs, chopped
- BBQ Rub to season brisket
- 1 package Slider buns
- 4 cups frozen blueberries
- 1 tbsp sugar add to blueberry puree
- 1/2 lemon for juice
- corn starch slurry to thicken blueberries
- 8 oz sharp white cheddar
- bacon up bacon grease
- 20 oz brie cheese
- 1/2 sweet red onion
- 2 tbsp melted butter to brush on slider buns
Instructions
- Add blueberries, lemon juice, and sugar to small pan on low medium heat.
- Mash once simmering and add corn starch slurry to thicken. Turn off heat and set aside.
- Toast slider buns if desired.
- Chop up brisket and warm up on low medium heat. Remove rind from brie and add to brisket mixing and allowing to melt.
- Shred cheddar cheese, place on bottom half of toasted slider buns.
- Add brisket once brie is melted then blueberry puree.
- Thinly slice 1/2 sweet red onion and place on top of blueberry puree before adding top layer of buns.
- Brush top slider buns with melted butter. Cover pan with foil and place in preheated oven at 375 for around 10-15 min to melt cheese. Enjoy!

Notes
If you want to really make things easier use blueberry pie filling. Â One can should work if you just spoon some on top of each slider. Â I think leftover roast would work great with these as well. Â Lastly, Â use preshredded cheese if you prefer. Â It just doesn't melt quite as well.
