  • 1 box Fire and Smoke Chicken Crispy Coatings
  • buttermilk to marinate chicken
  • Chica Licka Bam Bam seasoning to add to buttermilk
  • Hot Sauce to add to buttermilk
  • 1 lb bacon
  • 4 brioche buns
  • butter or bacon grease to toast buns
  • Ranch dressing
  • 8 slices sharp cheddar cheese
  • 8 slices Colby Jack cheese

Instructions

  • Butterfly chicken breasts and place in large bowl
  • Add buttermilk until chicken covered as well as a couple Tbsp seasoning and a couple dashes hot sauce. Mix that up and place in fridge for at least a couple hours.
  • Heat oil to between 350-360 degrees.
  • Cook bacon how you prefer and set aside.
  • Put crispy coating seasonings in a large bowl or a rimmed dish. Take chicken from buttermilk and place in coating until thoroughly covered. Allow to set 5-10 min before placing in oil.
  • Toast brioche buns with butter or bacon grease and set aside.
  • Fry chicken breasts until the are golden brown and 165 internal temp(around 5 min). Allow grease to return to 350 degrees before cooking next chicken breast.

  • To construct, add ranch to bottom bun. Then place chicken, bacon, more ranch, and top bun. Enjoy!!

Notes

You can use whatever oil you prefer.  I typically use bacon grease but peanut oil or vegetable oil works as well!

This has to be the best chicken sandwich ever. No comparison to any fast food chain or restaurant for that matter. This is so flavorful and juicy. Not too salty in my opinion. This seasoning is BOMB. You seriously outdid yourself with this combo. Delicious! Thank you for the awesome content and not making us jump thru hoops to get the recipes!

"Trashed" Wings

"Trashed Wings" originated in St. Louis, MO and I had them for the first time last summer. Made them at home less than a week after that and now they are a semi regular menu item around our house. They are easy to make, here is how you do it! Note: They are called "trashed" wings bc your oil will be trashed after making them due to cooking the already dipped in buffalo sauce.
