Shrimp Scampi Tortellini Bake

This Shrimp Scampi Tortellini Bake is as easy as it gets and and delicious as it gets!

Ingredients

  • 24 oz tortellini(fresh)
  • 2 lbs large or jumbo shrimp
  • 1/2 cup chicken stock or broth
  • 1/2 cup dry white wine
  • 3/4 cup heavy cream
  • 1 juice of small lemon
  • 1/2 cup grated parmesan(in dish)
  • minced garlic
  • 1/2 tsp red pepper flakes
  • 6 tbsp kerry gold garlic herb butter
  • 8 oz shredded mozzarella cheese
  • 1/3 cup grated parmesan(for top)
  • 1/3 cup italian panko bread crumbs

Instructions

  • Preheat oven to 375 degrees.
  • In a 9 x 13 glass baking dish, chicken broth, white wine, and heavy cream.
  • Next add lemon juice, grated parmesan, red pepper flakes, and minced garlic.
  • Whisk all that together before adding tortellini.
  • Bake covered for 20 min.
  • While in oven season shrimp with preferred seasoning. Salt/pepper/garlic powder is fine!
  • After 20 min fold in shrimp.
  • Add mozzarella cheese, grated parm, and italian panko bread crumbs.
  • Bake uncovered for 20 additional minutes. Enjoy!

    I actually made this and put it in a crock pot. Added a little extra liquid and parboiled my dry cheese tortellini. Omitted the panko obviously… This is an amazing recipe and I can’t wait to try it baked in the oven!

      The shrimp going halfway through and are large so I didn’t feel like they overcooked.

    Made this tonight and followed your instructions except for the white wine, I added a touch more broth instead. This really was very simple to make and it really is a quick and easy delicious dish. I paired it with a garden salad and some Cheddar Bay Biscuits.
