
Ground Beef and Tortellini
This Ground Beef and Tortellini is the most comforting one pot dinner recipe that's ready in 20 minutes. Inspired by beef stroganoff, it's comfort food that the whole family will love.

Ingredients
- 1 lb ground beef
- 1 small yellow onion
- 8 oz white mushrooms
- 2 tbsp ranch seasoning
- 2 tsp black pepper
- 1 tbsp Worcestershire sauce
- 3 cloves minced garlic
- 1.5 cups beef stock
- 1/3 cup heavy cream
- 3/4 cup ranch dip
- salt to taste
- 20 oz cheese tortellini
- corn starch slurry or roux made from flour/oil
Instructions
- Add ground beef to a large pan or dutch oven on medium heat.
- Once seared on each side, add onions and mushrooms to pan.
- Cook until ground beef is brown and mushrooms have cooked down, then add garlic cooking until fragrant before next step.
- Next, add ranch seasoning, black pepper, and Worcestershire sauce.
- Add Beef stock and tortellini. Cover and bring to a simmer to allow tortellini to plump up.
- Add have cream and ranch dip, stirring until smooth.
- Add corn starch or roux to thicken sauce.
- Enjoy!
Notes
I used about 2 tbsp of bacon grease and 2 tbsp flour for the roux. Â If using corn starch you could prob get by with same.
