Creek Fries

Why are they called creek fries?  I honestly don’t know the answer to that.  Maybe it’s a Kentucky thing but that’s what we have always called them!  I personally prefer them with Cajun seasoning and they are always a hit whether taking to a get together or when having people over for dinner.  Her is how I make them!

Ingredients

  • 5 lbs russet potatoes
  • 1/2 - 1 white onion
  • 1 lb Conecuh Cajun Sausage
  • 1/2 cup bacon grease
  • cajun seasoning

Instructions

  • Wash potato’s and cut into evenly sized slices.
  • Do same with onion.
  • Cut up sausage into desired size pieces.
  • Place all ingredients in a large aluminum pan (allows more even spacing).  
  • Put melted bacon grease over and mix so everything is coated.
  • Season with as much creole seasoning as you like.
  • Mix again then place in oven at 375 uncovered for around an 50-60 min until fork tender.
  • Stir about every 20 min.
  •  For a TON of added flavor cook on charcoal grill or smoker.  But,  still delicious in the oven!  Enjoy!

Notes

I use Tony’s bc it’s available almost everywhere and I had leftover from deep frying turkeys, plus it has great flavor!  But,  feel free to use any seasoning you like.  I sometimes switch it up!
