Brisket Grilled Cheese

It's worth smoking an entire brisket just to make a brisket grilled cheese. Cheesy goodness with sweet bbq sauce and the crunch of some pickled onion. Doesn't get much better!

Ingredients

  • 8 slices sourdough bread
  • 1 lb chopped brisket
  • 4 oz shredded Colby jack cheese
  • 4 oz shredded white cheddar cheese
  • BBQ rub
  • BBQ sauce
  • pickled onions
  • Bacon Grease

Instructions

  • Chop brisket, then season with bbq rub and shred cheese if needed, then set aside.
  • Get griddle set to low medium heat and put down bacon grease.
  • Add shredded Colby jack and then about 1/4lb brisket.
  • Top with a generous amount of BBQ sauce and pickled onions if desired.
  • Add white cheddar cheese to the top then toast on both sides until cheese is good and melty. Enjoy!

Notes

Use any cheese you like!  I also like using croissant bread which I get at Kroger,  its super buttery and rich!
