Brisket Grilled Cheese
It's worth smoking an entire brisket just to make a brisket grilled cheese. Cheesy goodness with sweet bbq sauce and the crunch of some pickled onion. Doesn't get much better!

Servings: 4 sandwiches
Ingredients
- 8 slices sourdough bread
- 1 lb chopped brisket
- 4 oz shredded Colby jack cheese
- 4 oz shredded white cheddar cheese
- BBQ rub
- BBQ sauce
- pickled onions
- Bacon Grease
Instructions
- Chop brisket, then season with bbq rub and shred cheese if needed, then set aside.
- Get griddle set to low medium heat and put down bacon grease.
- Add shredded Colby jack and then about 1/4lb brisket.
- Top with a generous amount of BBQ sauce and pickled onions if desired.
- Add white cheddar cheese to the top then toast on both sides until cheese is good and melty. Enjoy!

Use any cheese you like! I also like using croissant bread which I get at Kroger, its super buttery and rich!
