Blueberry Protein Pancakes
You don't have to sacrifice flavor when eating healthier. I have been eating better and trying to increase protein in my meals. These blueberry protein pancakes are absolutely delicious and packed with protein!

Equipment
Ingredients
- 1 cup Power Flour
- 2 tsp stevia
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup greek nonfat yogurt
- 1/2 cup 2% milk
- 2 large eggs
- 1 tsp vanilla extract
- 2 tbsp melted grass fed butter
- 1/2 cup frozen blueberries
Instructions
- In one bowl, mix dry ingredients and set aside.
- In a separate bowl, whisk together wet ingredients.
- Pour wet ingredients into dry mixture and whisk until just combined.
- Using a nonstick pan, turn on heat to low medium.
- Pour around 1/4 cup of batter in pan and drop some frozen blueberries into batter. Allow to cook until golden brown on each side.
- Top with sugar free syrup and enjoy!

Notes
If you don't have power flour you can sub all purpose flour for the same amount, Â just won't get the same protein. Â But, Â they will still be delicious pancakes! Â I use "Walden Farms" sugar free syrup, Â its available at most grocery stores.
