Alice Springs Sliders

I had never had "Alice Springs" chicken until visiting Outback Steakhouse when out of town last fall. I was instantly in love! I made the traditional version a few months ago and had to try it in a slider version as follows! These turned out amazing... I took them to my wife and her coworkers for lunch and they all loved them!!

Ingredients

  • 24 pack King's Hawaiian Rolls
  • 12 Boneless, Skinless Chicken Thighs
  • 1 lb Bacon
  • 1 lb Sliced white mushrooms
  • Minced Garlic
  • 1 tbsp Worcestershire sauce
  • Chica Kicka Bam Bam seasoning
  • 8 oz monterrey jack cheese
  • 8 oz Cheddar Gruyere cheese
  • 2/3 cup jalapeno mustard
  • 1/3 cup honey
  • 1/2 stick melted butter
  • black pepper

Instructions

  • Trim excess fat off chicken thighs if desired. Season with favorite rub and cook desired method until 165 degrees internal then set aside.
  • Cut up bacon and cook un til desired doneness then set aside.
  • Clean mushrooms then cook in residual bacon fat on medium heat for about 5 min. Then add W sauce, garlic, Seasoning, and black pepper. Once cooked to liking set aside.
  • Toast buns in either bacon grease or butter. If its a 24 pack you can divide in to 12's to toast in a large pan if not using griddle.
  • Shred cheese, mix mustard and honey together.
  • Begin layering with cheese on the bottom.
  • Cut chicken thighs in half and add one to each slider bun.
  • Drizzle honey mustard on chicken then add mushrooms.
  • Top with more cheese then add bacon.
  • Add top layer of rolls, brush on melted butter. Cover and place in 350 degree preheated oven(around 10-15min) until cheese is melted. Enjoy!

Notes

I'm all about adding flavor anyway possible.  That's why I prefer bacon grease to cook with!  You don't have to use jalapeño mustard if you want it less spicy.  Use whatever seasoning you prefer.  The Chica Licka Bam Bam is a cajun seasoning and is fantastic plus its easily available at Walmart.  Feel free th switch the cheese up!
