Chicken Sliders with Bacon and Mushrooms (Alice Springs Sliders)

These Chicken Sliders with Bacon and Mushrooms are the best appetizer for a crowd that you will ever make. Inspired by Alice Springs chicken, chicken thighs are layered on Hawaiian rolls and topped with sautéed mushrooms, bacon, and lots of cheese. It's easy to assemble these in advance to prep for a party or gathering too.

Notes

I'm all about adding flavor anyway possible.  That's why I prefer bacon grease to cook with!  You don't have to use jalapeño mustard if you want it less spicy.  Use whatever seasoning you prefer.  The Chica Licka Bam Bam is a cajun seasoning and is fantastic plus its easily available at Walmart.  Feel free th switch the cheese up!
Expert Tips
  • Roast or grill the chicken thighs. You can bake them in a 400ºF oven for 20 to 25 minutes until cooked through and a meat thermometer registers 165ºF. If you want to grill them, then preheat the grill to medium-high heat. Grill on each side for 6 to 8 minutes until cooked through.
  • Layer the sandwich correctly. Be sure to layer according to the recipe so make sure you get lots of flavor in each bite.
  • If you want to make your own Chicka Kicka Bam Bam Seasoning, simply combine 1 tablespoon of each black pepper, paprika, and garlic powder. Add a pinch of cayenne pepper and mix to combine.
  • Buy blocks of cheese and shred yourself. Pre-shredded cheese has a powder on it that prevents the cheese from melting as nicely. Shredding the cheese yourself is the preferred method here.
Storage and Make Ahead
Store any leftover sandwiches wrapped in foil in the fridge for up to one day. Reheat in the oven for 5 to 10 minutes until warmed through and slightly toasted. We don't recommend freezing any of the leftovers.
You can assemble the chicken sliders in advance. Layer the ingredients on the Hawaiian rolls and cover loosely in foil. Place in the fridge for up to 8 hours before buttering and baking. You can also prep all of the ingredients and layer right before baking as well; this let's you prep for a party the day before.
