In a large bowl add mashed potatoes, 1.5 cups parmesan, flour, and seasonings.
Mix well and place in fridge for 30-45 min.
In a rimmed container add 1/2 parmesan cheese and panko, combining.
Equally scoop out potatoes and pat into a "pancake" shape. Should be around the size of a drink coaster.
Firmly press both sides of each cake into panko/parm mixture and set aside.
Get your oil heated to medium-low. Cook each potato cake until golden brown on each side. Should be around 5-6 min per side.
Allow to cool and enjoy!

Leftover mashed potatoes work great but I buy the 2lb containers from Sam's Club. They are 7 cups per container. I use pork panic and cook in bacon grease for the flavor. Reg Panko works just fine.
