Smoked Bologna Blossoms

If you love smoked bologna, you will absolutely love these smoked bologna blossoms! Crispy, smoked bologna in every bite. Sure to be a crowd favorite for any BBQ or get together!

Ingredients

  • 1 chub bologna
  • Bacon Up Bacon Grease
  • BBQ Rub of choice

Instructions

  • Get your grill/ smoker set up for indirect heat at 250 degrees.
  • Cut bologna chub in half.
  • Cut vertically through each chub 4-5 times but don't cut all the way through. Leave around 3/4" at base intact.
  • Turn chub and repeat in opposite direction.
  • Hit with a binder(bacon grease, mustard, oil, etc) then season generously with BBQ rub of choice making sure to get in all the nooks and crannies.
  • Place on smoker for around 250 degrees for about 3 hrs. If you want it even crispier you can leave for 3.5-4 hrs.
  • Serve with your favorite mustard oil cheese sauce and enjoy!

Notes

I like using a binder with bologna bc it doesn't have the moisture to naturally hold the seasoning.  Also,  since bologna only smokes for 3-4 hrs I like to use a stronger smoke wood like hickory as opposed to oak which is more subtle.

    I was born and raised in Kentucky and moved to the Houston area 30+ years ago. When I visit, I always bring back some Fields or Fischers garlic bologna. It’s made in Owensboro. Can’t get any here with that taste and texture. I like to fry it and have a bologna, egg & cheese Sammy. My son will be flying in on Saturday and he’ll be bringing me 5 pkgs.!!
