
Slow Cooker Meatball and Tortellini Soup
This is about the laziest way to make some tasty soup everyone will enjoy!

Servings: 12 servings
Ingredients
- 1 package frozen meatballs(24-30oz)
- 1 jar marinara or spaghetti sauce(28-30oz)
- 4 cups beef broth
- 1 tbsp garlic powder
- 1 tbsp italian seasoning
- 2 tsp black pepper
- 1.5 packages family sized cheese tortellini(30-40 oz total)
Instructions
- Add meatballs, marinara, beef broth, and seasonings to slow cooker.
- Cook on high for 2 hours or low for 4-5.
- Turn slow cooker to low and add tortellini.
- Cook additional 45-60 min until tortellini is plump. Enjoy!

So I cooked this and didn’t get soup. I realized after the fact, that my daughter bought 40 oz of Tortelloni, and not Tortellini (Loni is bigger than Lini) I put in exactly 30 oz of meatballs (Kirkland brand Italian). Cooked it for 4 hours on low, added the tortelloni, and cooked it for another 60 minutes. I managed to cook all the ‘soup’ right out of the crockpot LOL…
Still turned out good, even though it wasn’t ‘Soup’.
Next time I’ll get the right pasta, and use the lower amounts.
