Pumpkin Chocolate Chunk Bundt Cake

I'm not a person that goes crazy over all things pumpkin but this bundt cake is legit!

Ingredients

  • 1 box yellow cake mix
  • 3 large eggs
  • 1/3 cup whole milk
  • 6 tbsp melted butter(unsalted)
  • 2 tsp vanilla extract
  • 2 tsp pumpkin spice
  • 15 oz pumpkin puree
  • 1 bag semi sweet choc chunks or chips
  • 1 cup powdered sugar(for glaze)
  • 1 tsp vanilla extract(for glaze)
  • 2 tbsp whole milk or heavy cream(for glaze)

Instructions

  • In a large bowl add your cake mix, eggs, milk, melted butter, 2 tsp vanilla extract, pumpkin puree, and pumpkin spice.
  • Beat until smooth, fold in chocolate chunks and then set aside.
  • Spray a bundt pan with some bakers joy or nonstick spray.
  • Pour cake mix into bundt pan and smooth out. Place in a 350 degree preheated oven bake for 35-40 min until a toothpick comes out clean.
  • While cake is baking make glaze by combining powdered sugar, 1 tsp vanilla extract, and 2 tbsp milk. If you would like it thicker add a little more powdered sugar, if you want it thinner add more milk a tbsp at a time.
  • Allow cake to cool in pan for about 10 min before flipping onto cooling rack.
  • Once cake is completely cooled add glaze to top and enjoy!
