Parmesan Crusted Fried Potato Cakes

Ingredients

  • 7 cups Mashed Potatoes
  • 2 cups grated parmesan cheese
  • 3/4 cup AP flour
  • 2 large eggs
  • 1 cup panko bread crumbs
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 tsp garlic powder
  • 2 tsp italian seasoning

Instructions

  • In a large bowl add mashed potatoes, 1.5 cups parmesan, flour, and seasonings.
  • Mix well and place in fridge for 30-45 min.
  • In a rimmed container add 1/2 parmesan cheese and panko, combining.
  • Equally scoop out potatoes and pat into a "pancake" shape. Should be around the size of a drink coaster.
  • Firmly press both sides of each cake into panko/parm mixture and set aside.
  • Get your oil heated to medium-low. Cook each potato cake until golden brown on each side. Should be around 5-6 min per side.
  • Allow to cool and enjoy!

Notes

Leftover mashed potatoes work great but I buy the 2lb containers from Sam's Club.  They are 7 cups per container. I use pork panic and cook in bacon grease for the flavor.  Reg Panko works just fine.

    Looks 😋 delicious! I never knew how to make these but must try now. Bob Evans mashed potatoes heated up is fine to use correct in case I don’t feel like making homemade mashed ones?
