Nashville Hot Party Ribs

Ingredients

  • 2 racks baby back ribs
  • kosher salt
  • 1/4 cup cayenne pepper
  • 1/3 cup turbinado sugar
  • 1/3 cup smoked paprika
  • 1/3 cup garlic powder
  • 1/4 cup mustard powder
  • 2 tbsp onion powder
  • 2 tbsp black pepper
  • 2 tbsp kosher salt

Instructions

  • Set smoker up for indirect heat bat 275 degrees.
  • Remove membrane from ribs and seqson with kosher salt.
  • Let salt sweat in for around 20 min and then cut into individual ribs.
  • Place on smoker for approx 90 min at 275 degrees. Ribs should be around 170 internal at this point.
  • While ribs are smoking make your nashville hot rub. You will have some left over for future use.
  • Also, get some oil or bacon grease heated to 350 degrees.
  • In batches, fry ribs for approx 3-4 min.
  • Place in a large bowl and season generously with nashville hot seasoning. Toss until well coated.
  • Next, add about 1/2 cup hot cooking oil and toss again.
  • Hit them with a little more seasoning upon plating and serve with dill pickles. Enjoy!
