Mexican Street Corn Dip

This is an absolutely amazing game day dip or for any pot luck! If you dont have a smoker, throw it in the slow cooker!

Ingredients

  • 8 ears sweet corn
  • 8 oz softened cream cheese
  • 1 cup sour cream
  • 12 oz shredded mont jack cheese
  • 4 oz hatch green chilis
  • 2 tsp chili lime seasoning(Tajin)
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 2 limes(juice only)
  • 2 tsp hot sauce
  • cilantro(for topping)
  • Cotija cheese(for topping)

Instructions

  • Char corn on grill or in a pan on med high heat. Just need some color on it.
  • In a large bowl add corn after removing from cob.
  • Add in remaining ingredients except for the cilantro and cotija cheese.
  • Stir until uniform consistency and then transfer to a greased cast iron skillet or casserole dish.
  • Place in oven or on smoker at 275 for around 90 minutes.
  • Top with cilantro and cotija cheese and enjoy!
