Jalapeno Poppers

These have to be one of the best appetizers or snacks you can make! Make em and tell me I'm wrong!

Servings: 12 poppers

Ingredients

  • 12 jalapeños
  • 8 oz softened cream cheese
  • 1 cup shredded sharp cheddar cheese
  • 12 slices bacon(not thick cut)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp bbq rub

Instructions

  • Get smoker set to 275 degrees.
  • Wash jalapeños, cut off top, and remove core/seeds.
  • In a mixing bowl combine softened cream cheese, cheddar cheese, and seasonings.
  • Transfer to a gallon ziplock bag and cut off tip. Pipe mixture into each jalapeño.
  • Wrap each jalapeño with a slice of bacon.
  • Apply BBQ rub to bacon.
  • Put on smoker at 275 until bacon is cooked through. Should take 60-90 min depending on thickness of the bacon. Enjoy!

Notes

Pro tip-  Get a rack specifically for jalapeño poppers and it will make it much easier on you.  They are less than $15 and will last forever.
