Creamy Chicken Enchilada Bubble Bake

Takes less than 15 min to throw together and its absolutely delicious!

Ingredients

  • 1 Rotisserie Chicken
  • 1 tube Grands Jumbo Biscuits
  • 10 oz Red Enchilada sauce
  • 1/2 cup sour cream
  • 1 packet fajita seasoning mix
  • 8 oz shredded pepper jack cheese

Instructions

  • Preheat oven to 350 degrees.
  • Remove skin from chicken and chicken from bone. Cut into desired size pieces.
  • Cut biscuits into 6 pieces each.
  • In a large mixing bowl add red enchilada sauce, sour cream, and fajita seasoning. Whisk until smooth.
  • Add chicken and biscuits into mixture and make sure everything is well coated.
  • Smooth out in a greased 9 x 13 baking dish.
  • Sprinkle shredded pepper jack cheese on top.
  • Bake around 45 min uncovered or until biscuits are cooked through. Enjoy!

        Honestly any way you prefer. Typically, I’d prob just use the air fryer or in a
        Cast iron skillet.

    I just made this tonight. It was so easy after a long day and soooo good! My husband loved it, too. Only change I made was that I added a 4oz can of diced green chiles. I will definitely make it again. 🙂

      The rotisserie chicken is prob closer to 4 cups but however much you prefer.

    My dad tolerates chicken. Could I use ground beef instead? He is 94 and my mom is 91. I try to cook for them 3-4 times a week. That’s the reason or my question!

    I went ahead and substituted the ground beef after browning it. It was delicious! I took half to my mom and dad and my husband ate3 helpings while I was gone! Barely enough for supper tomorrow night!

    I hate to be negative when everyone else has been so positive, but I prepared this tonight and the fajita seasoning overwhelms it. I would suggest taco seasoning or half packet.
