Crack Chicken and Orzo Soup

This soup is packed with flavor and so easy to make!

Ingredients

  • 1 rotisserie chicken
  • 1 lb bacon
  • 6 cups chicken stock
  • 12 oz orzo pasta
  • 2 tbsp ranch seasoning
  • 2 tsp garlic powder
  • 2 tsp black pepper
  • 1.5 tsp smoked paprika
  • 1.5 tsp onion powder
  • 1 cup heavy cream
  • 8 oz shredded Colby jack cheese
  • 8 oz cream cheese
  • 4 oz sour cream
  • salt(to taste)
  • dried parsley(optional)

Instructions

  • Remove rotisserie chicken from bones and remove skin. Cut up to preferred size.
  • Cook bacon how you like and chop up once cooled.
  • Shred cheese if not using pre shredded.
  • Add chicken stock to dutch oven or pot and bring to boil.
  • Add orzo and allow to boil around 4-5 min then reduce heat to simmer.
  • Add seasonings and stir until combined.
  • Now add softened cream cheese and sour cream.(I like to use a whisk here to combine quicker)
  • Introduce chicken and bacon along with heavy cream.
  • Slowly work in Colby jack cheese until completely melted and smooth.
  • Add dried parsley for color if desired. Enjoy!

    I didn’t know weekday to cook for dinner and I had all these ingredients except the chicken. This was easy to put together. We prefer creamy, ticket soups and my family loved this thanks for sharing!

    Very tasty. I changed it up a little. I used Greek yogurt in place of the sour creme and added a California blend of veggies. Served it up with a toasted baguette. Perfection! Will make again.

    I tried this recipe and it tastes great! I used more orzo and chicken stock, but it’s still creamy proportionate. I didn’t use any additional salt. Very good!

    I just made this and OMG!!! I only had beef bone broth on hand. It came out way thicker than your video, but holy soup! Delicious isn’t enough to describe how incredibly yummy this is!

    I made this tonight. I adapted it a little. Started with some sautéed onion celery and garlic in the bottom of the stock pot. Then I added broccoli florets and corn. It as incredible. I will make this again. Next I’ll add sliced baby bellas at the end.
