Chicken Enchilada Tortellini

This one pot meal is quick and certain to please even picky eaters!

Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • salt/pepper/garlic powder to taste
  • 17 oz red enchilada sauce
  • 1/2 cup chicken broth
  • 3/4 cup sour cream
  • 1 packet fajita mix
  • 24 oz cheese tortellini(fresh)
  • cotija cheese(optional)
  • 8 oz monterrey jack cheese

Instructions

  • Season chicken breasts with salt, pepper, and garlic powder after cubing.
  • Add a little oil or bacon grease to pan, Cook on med high heat and set aside.
  • Turn heat to med low. Add enchilada sauce.
  • Add chicken broth, sour cream, and fajita mix.
  • Whisk until smooth.
  • Pour in tortellini and stir until well coated.
  • Put on lid, and bring to a simmer.
  • After about 5 min add chicken in and stir. Put lid back on.
  • After about 5 more min stir again.
  • Now, add cotija cheese if desired and monterrey jack.
  • Turn heat off, place lid on until cheese is melted. Enjoy!

    Adding some sautéed onion, bell pepper and garlic to this will be fire!!!

    Made this for dinner tonight & substituted medium green enchilada sauce for the red. It turned out really good and I liked that there was minimal prep mess. This will be added to our regular dinner rotation!
