
Chicken Enchilada Tortellini

Ingredients
- 1.5 lbs boneless skinless chicken breasts
- salt/pepper/garlic powder to taste
- 17 oz red enchilada sauce
- 1/2 cup chicken broth
- 3/4 cup sour cream
- 1 packet fajita mix
- 24 oz cheese tortellini(fresh)
- cotija cheese(optional)
- 8 oz monterrey jack cheese
Instructions
- Season chicken breasts with salt, pepper, and garlic powder after cubing.
- Add a little oil or bacon grease to pan, Cook on med high heat and set aside.
- Turn heat to med low. Add enchilada sauce.
- Add chicken broth, sour cream, and fajita mix.
- Whisk until smooth.
- Pour in tortellini and stir until well coated.
- Put on lid, and bring to a simmer.
- After about 5 min add chicken in and stir. Put lid back on.
- After about 5 more min stir again.
- Now, add cotija cheese if desired and monterrey jack.
- Turn heat off, place lid on until cheese is melted. Enjoy!
