Cheesy Chicken Enchilada Dip

Easy dips are perfect when you have a pot luck or a get together coming up but you are short on time. The slow cooker does all the work making your life easy! This cheesy chicken enchilada dip is about as easy as it gets and is sure to be a crowd pleaser!

Equipment

Ingredients

  • 1 Rotisserie Chicken
  • 8 oz cream cheese
  • 12 oz Oaxaca cheese
  • 12 oz queso blanco
  • 1 oz taco seasoning
  • 1 can red enchilada sauce 16-20oz

Instructions

  • Remove skin from chicken and remove chicken from bones. Cut into preferred size.
  • Place chicken in slow cooker along with all other ingredients. I like to tear the Oaxaca cheese up to make it melt easier.
  • Place lid on slow cooker and cook on low for 2-2.5 hrs until cheese is melted.
  • Stir until smooth and turn slow cooker to warm.
  • Serve with tortilla chips, enjoy!

Notes

You can use Mont jack or quest quesadilla cheese if you can't find Oaxaca cheese.  Most grocery stores have it in the section with hispanic refrigerated goods.  This doesn't really even need a written recipe but some people like it written out and I aim to please!

    Tried this and while the flavor was awesome, mine came out SUPER runny. No ide why. Also I cubed up the cream cheese when adding and it still hadn’t all melted after 3 hours of heating. I had it heating while at work so i could take to a party afterwards so didnt stir till got to my destination. Maybe that’s why? Will definitely make again though, just not when taking to a gathering. If it hadn’t been so runny, 5 stars for sure
