Cheesy BBQ Chicken Tortellini

This one pot meal is so easy to make in less than 30 minutes! Its delicious and sure to be a crowd pleaser!

Ingredients

  • 1 Rotisserie Chicken
  • 24 oz cheese tortellini(fresh)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1.5 cups bbq sauce of choice
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tbsp bbq rub of choice
  • salt/black pepper to taste
  • 8 oz shredded sharp cheddar
  • red onion(optional)
  • green onion(optional)

Instructions

  • Remove skin from rotisserie chicken and chicken from bone. Cut into preferred size chunks.
  • In a large saute pan or dutch oven on medium heat, add chicken broth, heavy cream, bbq sauce, and seasonings.
  • Bring to a simmer and add tortellini as well as chicken. Cover and allow to simmer until tortellini is plump(around 10 min).
  • Add salt/pepper to taste.
  • Once tortellini is plump, add shredded cheese to top. Cover with lid and allow cheese to melt.
  • Add diced red and green onion if desired to the top. Enjoy!!

    Made this, substituted some pulled pork that needed used up, but followed everything else. Turned out fantastic, my picky eater even ate it all without complaint. I’m not a big fan of bbq, but enjoy having something different and using up ingredients we already have
