Biscoff Poke Cake
I love all things Biscoff! We had a get together and I needed a dessert and came up with this easy poke cake. It was a huge hit, here is how I made it!

Servings: 1 cake
Ingredients
- 1 box yellow cake mix
- 4 large eggs
- 1 cup whole milk
- 1 stick unsalted butter melted
- 2 sticks unsalted butter softened for icing
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1 jar Biscoff cookie butter 14oz
- 2 tbsp heavy cream to thin icing as needed
- 1 bottle butterscotch syrup 20 oz
- 11 biscoff cookies
Instructions
- Preheat oven to 350 degrees.
- In a large bowl mix together cake mix, eggs, milk, and melted butter until smooth.
- Grease a 9 x 13 cake pan and pour in cake batter.
- Bake at 350 for 28-30 min until a toothpick comes out clean.
- While cake is baking make icing by adding 2 sticks softened butter to a bowl with vanilla extract. Beat with stand mixer until smooth.
- Add powdered sugar and mix until well combined.
- Mix in cookie butter and add a little heavy cream until desired consistency achieved.
- When cake is finished poke holes in it while still hot. Immediately pour butterscotch all over cake.
- Allow cake to cool for a few min before adding icing.
- Smooth out icing and top with crushed biscoff cookies. Save one to place in the center. Enjoy!

I actually chilled this but its fine to serve room temp.
I’ve never heard of Biscoff cookie butter! What is it!! Actually never heard of Biscoff anything!!
Biscoff is a cookie that Delta airlines serves. They sell them in the grocery stores now. My favorite cookie. The Biscoff cookie butter is like peanut butter, but tastes like the cookie. It’s very sweet.
I like this recipe but I prefer the Tres Leches cake one
