BBQ Half Chickens

When I say it doesn't get much better than this, i mean it. Half Chickens are easy to cook and always delicious!

Ingredients

  • 2 whole chickens
  • BBQ Rub
  • 1/3 bottle BBQ Glaze or Sauce
  • 1/4 cup Honey

Instructions

  • Get grill or smoker heated to 300 degrees for indirect heat.
  • Remove spine from chickens by cutting along side it with a sharp knife or kitchen shears.
  • Once spine is removed, turn the chicken over and cut right through the center of the breast plate.
  • Remove moisture from chickens with a paper towel.
  • Generously apply BBQ rub of your choice all over the chickens on both sides. If you can get under the skin also apply some there.
  • Place on indirect heat at 300 degrees.
  • In a mixing bowl add glaze/bbq sauce, honey, and about a tbsp of BBQ Rub. Whisk together well.
  • Brush on chicken about every 30 min until thickest part of breast hits 160 internal.
  • This allows the glaze to caramelize as it cooks adding even more flavor.
  • Rest chickens for about 10-15 min before enjoying!
