Cheesy BBQ Chicken Tortellini

This one pot meal is so easy to make in less than 30 minutes! Its delicious and sure to be a crowd pleaser!

Ingredients

  • 1 Rotisserie Chicken
  • 24 oz cheese tortellini(fresh)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1.5 cups bbq sauce of choice
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tbsp bbq rub of choice
  • salt/black pepper to taste
  • 8 oz shredded sharp cheddar
  • red onion(optional)
  • green onion(optional)

Instructions

  • Remove skin from rotisserie chicken and chicken from bone. Cut into preferred size chunks.
  • In a large saute pan or dutch oven on medium heat, add chicken broth, heavy cream, bbq sauce, and seasonings.
  • Bring to a simmer and add tortellini as well as chicken. Cover and allow to simmer until tortellini is plump(around 10 min).
  • Add salt/pepper to taste.
  • Once tortellini is plump, add shredded cheese to top. Cover with lid and allow cheese to melt.
  • Add diced red and green onion if desired to the top. Enjoy!!
